Lemon and Herb Crusted White Fish

Admission – I’m crazy about anything I can make in less than 30 minutes for a meal. This is amazing, and there’s almost NO clean up afterward. LOVE this meal! And it’s heart healthy!

1 Tbsp. fresh lemon juice
2 tsp. extra virgin olive oil
2 tsp. fresh dill, chopped
2 tsp. fresh cilantro, chopped
2 tsp. fresh terragon, chopped
1 clove garlic, finely chopped
2 small red potatoes, thinly sliced
2 (4 to 5 oz. each) white fish fillets (such as halibut, red snapper, or tilapia)
1/2 tsp. sea salt or Himalayan salt
1/4 tsp. ground black pepper

Preheat oven to 450 degrees Fahrenheit. Combine lemon juice, olive oil, dill, cilantro, tarragon, and garlic in a small bowl; mix well and set aside.

Arrange two 12 x 13-inch pieces of foil on a large baking pan; coat lightly with nonstick cooking spray. Arrange potato slices evenly on center of each foil.

Season fish fillets evenly with salt and pepper and place each fillet on top of potato slices that are on each aluminum foil. Spoon lemon and herb mixture evenly over each fish fillet. Bring up foil sides; double fold top and ends to seal each packet, leaving room for heat circulation inside.

Bake for 10 to 12 minutes or until fish is just opaque in center and vegetables are crisp-tender. Carefully open packets, allowing steam to escape away from you and let cool briefly. Using a spatula, gently push the fish and vegetables onto plate.

Chicken Diets — Oh My Gosh!

Okay – last week had to be the max. I’m always on a diet of one kind or another. Usually it’s a see food diet. I see food. I eat. But, I had decided to do the low cal diet in combination with a juice fast that was supposed to kick start my *NEW* weight loss program.

But, trust me, there comes a point where you don’t want juice, you don’t want “diet” anything, you want real, honest to goodness, chew food. Chicken is perfect for chew food, so says Oris George. So, there I was cooking up a quick meal of chicken for dinner.

It’s perfect. Low calorie. No fat. Great taste. And best of all, I could add hot sauce. And we all know how much I like hot sauce. Broiled chicken, or even grilled chicken on the George Foreman, is a favorite.

Two tablespoons of the ULTIMATE homemade hot sauce, guaranteed to let you know you’ve had flavor. Made with 1 Jalapeno pepper (seeded), 1/2 a tomato, 1/4 of an onion and a little salt and pepper to taste, this hot sauce offers a little bit of Zing, even when you’re not on a diet. But, this time, I wanted extra flavor so I included the seeds out of the pepper and a second whole Jalapeno Pepper. Toss it all in a small bullet blender and whir away your troubles.

The finished salsa looked more like tomato puree with Jalapeno seeds than anything else, and smelled hotter than an M-80 in a fox hole. But I really like hot food so, I spread a lethal dose of it over my chicken breast – perfectly cooked to tender and juicy, took a knife and fork out on the deck to the table with a glass of fresh squeezed lemon water (no sugar).

The first bite coaxed a little bit of a kick out of the salsa, but the chicken was delicious. I cut off another bite and loaded it up with salsa. My mouth burned a bit, but swallowing wasn’t a biggie, and I loved the feel of the salsa going down. Nice and cool with a kick.

By the third bite I was thinking I really liked the salsa on the chicken, and really added quite a lot more of it to the top of my little bite of the bird. I noticed there were a few more seeds in that bite, but it had been good so far… I took the bite. Followed it with the glass of lemon water and headed inside for more of something to cool the burn that had suddenly taken over my esophagus. I could feel it all the way down. But, still, there’s a sensation of eating something extra hot that I like so I went back for another bite or two. By the time I got to the last five bites of the chicken, I was out of salsa, so I went inside to get a little more.

I emptied the bottom of the blender bullet onto my chicken and liberally added more to each bite I took. The burn had pretty much ceased in my mouth and I didn’t feel the need to drink a lot of anything, but I decided a nice cool half of avocado would be great for dessert. So, I took my avocado half back to the porch. Over the next thirty minutes or so, I sipped another glass of lemon water and finished off my half of the avocado, while reading a book.

That’s when it started. In the pit of my tummy, I realized there was a burning sensation. It grew. I began to feel warm all over. I sat there on the deck reading and thinking about the meal I’d just enjoyed, wondering if I’d enjoyed too much of a good thing. My knees felt a little warm, my elbows were quite toasty, and when I looked down my toe nails were on fire.

Honest… That’s my story. And I’m sticking to it. That’s how my feet got burned on the chicken diet!

We’ve been on a health kick recently. Looking for healthy ways to eat the best foods, with as much flavor as possible. These wraps came through last week, with shining raving color. We got a little adventurous as we added various ingredients.

These wraps can be super healthy if you fill them up with fresh veggies and not much sauce. They really don’t need the sauce and the neatness factor requires you to go easy.

As my son says, “Almost anything can go in a wrap!”

The Tuna Alternative

Every family has their quick and ready dinner standbye — ours has been tuna and pineapple for several years, but tonight… My son changed that up a bit.

We were out of pineapple so he went straight for creative genius!

Tuna Sandwiches with a touch of… um… cranberry?

They were heavenly!

Tuna salad with mayo — the usual mix with a bit of pickle relish, boiled egg and onion. Throw in a handful of mozzarella cheese, and a couple handfuls of craisins. The slather onto bread as usual and serve with a few carrot sticks and some chips. Yummy delicious.

I never ever thought he’d replace pineapple in our quick and ready tuna dinner – but… he did!

Franks Chicken Cream Cheese Wraps

Looking for a NEW hot and spicy meal for dinner? Try this healthy and delicious chicken recipe.

About 2 lbs shredded cooked chicken
1/4 cup Franks Hot sauce
6 – 8 ounces of cream cheese
Heat through – stirring to keep from browning or burning.

In spinach wrap, place about
2/3 cup of chicken mixture
2 – 4 tablespoons grated cheese
4 – 5 slices of avocado
Sprinkle with a bit of Franks Hot Sauce
Wrap tight and serve.

Makes 5 – 8 wraps, depending on size of wraps.

We’re all really big on wraps, because they can be increased or decreased in size according to the number of people and side dishes.

This one is spectacular with a salad full of greens, tomatoes and onion.

On the run?

Just tuck the salad in the wrap too! These are perfect take along meals for the ball game, just tuck them in the cooler with your drinks and a freezer pack, they’ll be yummy when you get there!

The kids call these Buffalo Chicken Wraps, because the flavor reminds them so much of Buffalo Wings. They are quickly becoming one of our Summer favorites.

Garlic Chicken Breasts – Deliciously Served with a HUGE Salad

My kids now refer to my salads as Grasshopper Greens. LOL

Dandelion GreensGotta love kids who recognize the Dandelion Greens in the grocer’s freezer. Either they were raised harvesting the front yard (we don’t say THAT in front of the City Code Inspector) or they grew up in a neighborhood where Dandelion’s were a sacred part of the gardening scheme, right? Well, in reality, neither one, but they THINK they harvested the front yard, because they’ve been eating Dandelion Greens since they were knee high to the pup next door.

Serve up a handy sized portion of greens on a plate with this incredibly yummy delicious chicken, pan sauteed in butter with a sprinkle of garlic powder, onion powder and a little seasoning salt and you’ve got a meal fit for a King, if he’s even the least bit REAL on the inside. We love this menu, drizzled with a bit of lime juice and some great sunflower seeds to add crunch to the salad, it’s an amazing meal. The kiddos like theirs with a handful of grape tomatoes and some garlicky cheese bread straight from the oven. But I take mine straight with a sprinkle of Parmesan cheese on the salad, maybe throw in a handful or two of craisins for that sweet flavor without the sugar.

It takes about twenty minutes to saute the chicken with the seasonings ready, and you’re sitting down with candle light before the sun goes down. Can’t you just imagine a candle light dinner on the deck with the sun setting, and a flavorful meal before you? Sounds extra yummy.

Ah! New Fast Food Favorite

We all have our favorite meals, and I just created another FUN, FAST food favorite – using – real fast food.

Pizza Hut has long made the best boneless hot wings. We love ‘em. In fact, we order them about once a week, whether we’re hungry or not.

There just happened to be about half a dozen left over from last night, with the medium buffalo sauce on them. I wanted something yummy for lunch and looked to see what I could find.

Lettuce, tomato, cucumber, a little onion, some carrots and a few stalks of celery all chopped up in a salad.

Added a fist full of shredded cheese and three good sized hunks of Pizza Hut Hot Wings, chopped up.

Top it off with a table spoon or so of Ranch Dressing goodness and you’ve got a lunch salad to be proud of.

Add in a couple of cheesy breadsticks and you’ve got a lunch salad fit for … uh, me.
